In a continuing effort to keep things low-carb, I picked out another recipe from the 1001 Low-Carb Recipes book. This time it was something fairly simple to make, a version of sloppy joe’s. As easy as sloppy joe’s are to make, if you buy the sauce in the can, this is just as easy. All you are doing is putting in the salsa and the cheese and presto! The original recipe only called for 1 lb of beef and 1 cup of salsa, but a jar of Pace Chunky Salsa is more than one cup, so I doubled the beef amount. And since we always have some cheese around the house, even if I am lactose intolerant, adding two cups of Sargento Mexican-style cheese was not a big deal.
While adding cheese and salsa to ground beef sound like a flavorful winner, it still wasn’t enough for me. Maybe because I like my food spicy and Lisa does not, so the salsa was mild and I didn’t throw in much other spicy ingredients. In the end, it was just easier for me to add some French’s Spicy Brown Mustard to kick things up a notch. But, this is definitely something to put on the “try again” list, if only because it was so simple to make and easy to modify to your liking.

Instructions
In a large skillet, brown and crumble the ground beef and drain off any fat. If you have any special seasonings that you like to put on your ground beef, like McCormick’s Grilled Montreal Steak, then put some of that in after draining the fat.
