Lisa bought some chicken rub from somebody’s kid when she was at work called Daddy’s BBQ Sweet Love Chicken Rub. Since we have been doing a “low carb” diet lately, I bought some chicken, so that we could give it a try. The rub comes in what looks like a miniature floor sack, which in a way gives it a “authentic” southern feel to it. On the back of the sack is the basic recipe for using the rub. The recipe calls for a whole chicken, but I’m not big on pulling meet off of bones, unless it is buffalo style wings, so I bought a package of chicken breasts. Using breast also makes it easier to turn any leftovers into sandwiches or wraps. I also had a bunch of celery, carrots, mushrooms and onions leftover from the Logan Family Beef BBQ,(which by the way, is great mixed with my chili) so I figured I should use those up, because they weren’t going to eat themselves. It is always a risk to mess around with a recipe, so I didn’t know how things would turn out, but I figured the vegetables, at the worst, would end up being like those cooked in a roast. Of course that also means that I don’t have exact measurements for most of this recipe.
The first thing I did was make up the chicken rub and put it in a Ziplock gallon bag with the breasts. My first thought was that I In light of this, it is possible to cure both mental shop levitra http://ronaldgreenwaldmd.com/procedures/ and sexual disorder completely. But, they looked fairly well covered in the bag, so I put the bag in the refrigerator and let them marinate for about 4 hours. When I had the chance in, my busy day of taking care of my 3 month old son, I diced up the celery, 4 carrots and half an onion and mixed them with the already cut up mushrooms and put them in the fridge until it got closer to dinner time. I preheated the oven to 350 and sauteed the mixed vegetables with some parsley flakes and rosemary. I had planned on putting one layer of vegetables on the bottom and one on the top of the chicken, but I only cut up enough to layer the bottom. The chicken breasts barely fit into my baking dish. I put the dish in the oven for 70 minutes and went back to taking care of little me.
70 minutes was the perfect amount of time. I checked the chicken breasts and they were all perfectly done. The vegetables were definitely cooked in the juices, but still eatable. The rub was tasty and not overwhelming. This could be the recipe or the fact that I needed to double the recipe. Either way, the chicken was very moist and delicious. It was also a little bit of change from my little bit too spicy chili, that we’ve been eating for the past few days. The rub sack has enough for multiple recipes, so I know we will be having some more Sweet Love.
