While working on a grocery list for the week, I noticed we had plenty of Zantarain’s rice boxes. I thought in my head that sometimes people use meat and rice to create a casserole. I searched on All Recipe’s site for rice and casserole and found a Spice Baked Rice recipe and looked it over. It seemed pretty simple; some meat, some rice, bake and add cheese. So, I sent Lisa to the store to pick up some ground turkey, an onion, and some bell peppers along with the rest of the grocery list. The pantry had also shown an abundance of Del Monte tomato cans, so I grabbed one of those cans as well. I also had some left over cheddar cheese, but I asked Lisa to pick up another bag, just in case. Because I like things a little spicy, I added some andouille sausage to the mix.
