Well, it’s that time of year again. The night begins earlier, the weather gets colder and thoughts of warm comfort food flood my brain. One of my favorite comfort foods is meatloaf. I know some people frown at meatloaf, but if you love a hamburger how can you pass up a hamburger that’s in loaf shape? You might say that meatloaf isn’t the same as a burger. Sure, it’s baked and not grilled, but you can plop it in between two pieces of bread just the same. And of course, the best part about a meatloaf, it isn’t restricted to just one type of meat.
This version leans towards the lean type of meatloaf. I’m using ground turkey instead of ground beef and I’m also using some “light” sausage. The great thing about ground turkey is, you can add all sorts of seasoning to it to make it not taste like turkey. Roasted turkey is fine, but ground turkey is sort of bland. I found some meatloaf mixes from Pioneer Brand on the shelf, so I thought I would give that a try. Usually I just add Hunt’s Seasoned Tomato Sauce for Meatloaf or some McCormick’s Montreal Steak seasoning to change the flavor, but I thought I would give something new a try. I noticed that Pioneer has a turkey meatloaf mix on their site, but I didn’t see it on the shelf. I probably wouldn’t have grabbed it anyway if I did. I also decided to sprinkle a little cheese on top before adding the last bit of tomato sauce. Lisa’s been having a “can’t we sprinkle a little cheese on it” food craving lately, so I figured I would buy a bag of Sargento.

- 1 can Hunt’s Seasoned Tomato Sauce for Meatloaf

Directions
I use 2 small bread pans that I spray with Pam Cooking Spray. Having 2 loafs helps it cook faster and allows for easier splitting with your sweetie. Spray the pans before getting started so that they are nice and ready when you add the meat. Mix together ground turkey and sausage in a bowl. Add water, egg, meatloaf mix and mix through out meat. Pour in less than half a can of tomato sauce and mix together. Separate mixture into the two sprayed loaf pans. Pre-heat the oven at 400 degrees. Because you will most likely have some spill over, place the two loafs on a cooking sheet to catch the drippings. You will probably want to drain the grease around the 30 minute mark. Cook the loafs for about 40 minutes to an hour (depending on the size of the pans used). Pull out the loafs, add some cheese and the rest of the tomato sauce on the top. You will probably have some sauce left over, I guess you can heat it up and use in place of ketchup, if you put ketchup on your meatloaf. I prefer W Ketchup. Cook for another 10 minutes.
Looks yummy!!
