Well, the chili is pretty much gone, so it is time to use up the other 2 pounds of ground turkey from the beginning of the week.  I put the remaining turkey in the freezer when I made the chili, so I had to put it in the fridge this morning in order to thaw it out for tonight.  Well, it didn’t really thaw out.  Luckily for me, my microwave has a thaw option.  So, while the turkey was thawing out, I started getting some ingredients together.

I still had two links of Chef Bruce Aidells andoullie style sausage left, a half of onion, another can of Hunt’s Seasoned Tomato Sauce for Meatloaf and some Gwaltney Mild Premium Park Sausage.

For me, a basic meatloaf is made up of a few different types of meat and put into a loaf.  If you have the glue to put the meat together, tomato sauce, egg and breadcrumbs or crackers, then you are on your way to having a loaf.  If you like to flavor hamburgers, then use the same techniques to flavor meatloaf.  Be creative, but don’t get the mixture to liquid or it will fall apart on you when you try to eat it.

  • 2 lbs ground turkey
  • 2 eggs
  • 1/2 onion, chopped
  • 1/2 cup Old London bread crumbs
  • 1 can Hunt’s  Seasoned Tomato Sauce for Meatloaf

Cut the sausage links into small quarter chunks and mix sausage, turkey, eggs, onions and 1/2 can of Hunt’s in a bowl.  After everything is mixed together, mix in bread crumbs and any other spices that you like.  Pre-heat oven to 400.  Put meat mix into a loaf pan and cover top with remainder of Hunt’s can.  Place in oven for 1 hour.  Alternatively, you can put the 1/2 can of Hunt’s or any homemade sauce on after cooking for an hour and then cook again for another 15 minutes.

Tip: I used my Kitchen Aide to mix everything together.  Speed level 1 was fast enough

Tip: Put a cookie tray under the meatloaf pan while in the oven to catch any spill over of grease and juices
