Due to my work schedule, I am more likely to get home before Lisa. And on Tuesdays, Lisa is more likely to get home much later than I do. Being that yesterday was our first “work day” together, we are still getting used to our schedules. Knowing that Lisa would be exhausted from work and already being informed that she had a little bit of a headache, I decided to make a quick and simple dinner from what was already in the kitchen. We’ll call this Quick Cooking recipe “Kick ‘n Smoked Chicken“.
My sister-in-law, Amy, left some chicken breasts in the freezer and we put them in the refrigerator to thaw for a chicken recipe that Lisa wanted to try. Cooking up chicken is pretty easy, because you can add almost anything to it for flavor. I had just recently cleaned out my spice cabinet, due to complaints by my sister-in-law while she was cooking for us that my spices were old. She was right, some very old stuff in there. But, I still had some spices left that were still good. Some of the spices I bought were part of the Weber Grill Creations. The spices were on sale and since I bought a new grill and enjoy spicy food, I thought I might as well get these. I had been to the Weber Grill Restaurant in Chicago about a year ago and enjoyed the food there. I also grabbed one of there sample spice packages on the way out. Being that Weber makes grills, I took a wild guess that they probably might know how to make some spices to flavor up the things cooking on their grills.
The second part of the recipe is something I tried a few years back called Liquid Smoke by Colgin. For those who love to grill, there are many ways to flavor the meats being cooked. Most grill cooks go the safe route and just put what they are cooking on the grill. Some get fancy and place special briquettes or wood in the grill to add flavoring. Hardcore grill masters probably have a smoker as well as a grill. For those of us with limited space and budget getting that sitting in a smoke house for a day flavor is out of reach, without a little cheat. A few years back I saw a bottle of Liquid Smoke on the shelf at the local grocery store. I bought it for some steak and really enjoyed the results. At the time there was only one flavor of Liquid Smoke and now there are four. I had picked up a bottle of Mesquite and decided that I would use it for the chicken.
For this job, we’ll be using the Cuisinart 12″ deep frying pan.
Ingredients
- Chicken – 4 small to large boneless breasts
- Olive Oil – 3 caps / teaspoons
- Weber Grill Creations – Kick “N Chicken
- Liquid Smoke – Mesquite

Cooking
- Turn stove top to just above medium heat. Add olive oil and swirl pan around to cover evenly along bottom.
- Add thawed/fresh chicken breasts into pan. Preferably space breasts so they aren’t touching
- Sprinkle Kick ‘N Chicken generously onto breasts and cover.
- When bottom portion of chicken turns white (based on the size of the pan and depth of oil, the higher the line of white will be), turn chicken over and sprinkle Mesquite Liquid Smoke on each breast. The more Liquid Smoke sprinkled on, the more smokey it will get. I suggest to do it lightly the first time, because the smoke can be overwhelming. Recover with lid and let cook until chicken is no longer pink on the outside (3 – 5 minutes).
- Before spices begin to burn, flip chicken spice side up and recover for 3 minutes.
Tip: Total cooking time for chicken breast should be 8 to 10 minutes.
Tip: You can lower the heat after flipping back to spice side up if you have other items to cook. The lid on the pan should trap all the moister in and help keep the chicken very moist.
Tip: C ut into the center of the breast to see if all the pink is cooked to white if you are unsure if the chicken is done
Tip: Use plastic thongs to flip the chicken to avoid scratching your nonstick frying pan
And here is what it looked like. Very easy and quick to cook. I cooked some corn to go along with the chicken. With four pieces, we are able to have the chicken and corn as second meal. I put one breast and some corn in a container that is microwave safe, to make it easy to reheat the entire meal. The flowers is the center piece from our wedding reception on Sunday. Thanks Mom!
